Achiote Paste is made with a blend of annatto seeds, spices, herbs and vinegar. It is traditionally used in Mexican cuisine, specially in the Oaxaca and Yucatan regions to marinate meats, poultry, fish and game. On its own, this bright ruby, soft paste is quite bitter and strong, but if you mix it with orange juice and cider vinegar, it makes an amazing marinade of subtle tangy flavours.
Care: this achiote paste comes in a plastic wrapped block. Keep it in a dry, cool place, inside their box and their wrapper until you're about to use them to prevent it going hard.
