An aromatic herb with woody notes. Brings out deeper flavours in stews, casseroles or tomato based sauces. Thyme Leaves have a dry aroma and slightly minty flavour. This herb is delicious in stews and casseroles. Used to flavour patés and terrines, thick vegetable soups, tomato and wine based sauces and in marinades for pork or game meats. A savoury herb with a floral aroma and slightly warming peppermint aftertaste.

Achiote Paste is made with a blend of annatto seeds, spices, herbs and vinegar. It is traditionally used in Mexican cuisine, specially in the Oaxaca and Yucatan regions to marinate meats, poultry, fish and game. On its own, this bright ruby, soft paste is quite bitter and strong, but if you mix it with orange juice and cider vinegar, it makes an amazing marinade of subtle tangy flavours. Care: this achiote paste comes in a plastic wrapped block. Keep it in a dry, cool place, inside their box and their wrapper until you’re about to use them to prevent it going hard.
